We receive lots of questions about our doughnuts. Here are a few of the most common:
What is a raised doughnut vs a cake doughnut?
The trademark of a raised doughnut is its airy, fluffy texture. Our raised doughnuts are made with a brioche dough and topped with a variety of house-made glazes, frostings, and toppings. Brioche is a rich, tender, yeast dough made with eggs, milk, and butter. We stick to the basics and only add a few secret ingredients so our soft, fluffy, buttery dough pairs perfectly with any topping.
Often referred to as “Old Fashioned”, cake doughnuts are made in the style of a traditional cake batter with butter, sugar, eggs, and dairy – we use buttermilk and sour cream. Our cake doughnuts have a tender crumb and a rich, yet delicate taste. We make frostings and glazes to complement the texture and style of our cake doughnuts.
What ingredients do you use to make your doughnuts?
Raised Doughnuts: All Purpose Flour, sugar, butter, eggs, milk, yeast, nutmeg, lemon zest, salt
Vanilla Cake Doughnuts: Cake Flour, sugar, butter, eggs, sour cream, baking powder, baking soda, salt, vanilla beans, vanilla extract
Chocolate Cake Doughnuts: All Purpose Flour, sugar, butter, eggs, sour cream, buttermilk, eggs, baking powder, baking soda, cocoa powder, black cocoa powder, nutmeg, salt
All our doughnuts are fried in soy oil.
I have food allergies? Do you offer anything that is wheat/nut/dairy free?
We take allergies very seriously. All our doughnuts contain wheat, dairy eggs, and soy. Our menu changes seasonally, and we often serve a doughnut that contains nuts. If a doughnut contains nuts, the nutty ingredient will either be a topping or a filling. We do not include nuts or nut products in the doughnuts themselves. Nutty doughnuts are kept separate from the nut-free doughnuts and are prepared with separate equipment.
Do you offer vegan doughnuts?
Yes, Blackbird Doughnuts does have vegan options. Our current vegan options are the coconut carrot cake and blackberry jam bismarck.
What about gluten-free?
We do not. All our doughnuts are wheat flour-baed and are made onsite at our production facility in Brighton. We could never guarantee a gluten-free offering would be free from cross-contamination.
Should I keep doughnuts in the refrigerator?
Doughnuts are freshest when stored and served at room temperature. Refrigeration will dry out doughnuts. All our doughnuts are made fresh in small batches without preservatives and should be enjoyed the same day they are purchased. If planning to store doughnuts overnight, tightly wrap the box in plastic wrap and store at room temperature.
